Oh so good!

I decided to make chili for supper tonight.
And what goes better with chili than cornbread?

And I just happened to have this brand new cast iron skillet hanging about...



Can't you just taste that?  It's true - cast iron DOES make food taste better!!

And it's just an ugly rumour that I've eaten 1/4 of it already...

Recipe from the Pioneer Woman, using vinegar + milk in place of buttermilk, and lard in place of shortening.

  1. this is my first visit to your blog, great reading and I look forward to coming back.. like you I love my cast iron fry pan... I was inspired by the Pioneer woman as well, it makes great bread and I won't go back to teflon. Your cornbread looks scrumptious!

  2. Yum! I love cornbread. I'm going to make a batch later this week to have with baked beans. :)

    And you use lard! Okay, lard (and real butter?) and cornbread and cast iron cookware and you save Sobeys points and stock up on good meat sales, and I've only read one post so far ... can we be best friends now?

  3. I KNEW I smelled cornbread the other day!! I just couldn't tell which direction it was coming from. Life is not complete without an iron skillet - when you come south to visit we'll show you some other food that just isn't right unless it's cooked in an iron skillet!

  5. Canadian Doomer - LOL! And yes, I *always* use real butter - in fact, I use a combo of lard and butter in my pie pastry :)

    Sure we can be best friends - in fact, if we lived closer, I'd be there learning how to pressure can (without the burns, though - ouch!!)!

  7. Oh, burns are BAD! That's the first lesson - learn from my mistakes and don't get burnt. Who knew you could get a steam burn, in seconds, through an oven mitt? My preschooler's been laughing at my bright green bandaid all day, and the baby's been trying to pull it off.

    Pie pastry ... now there's a frontier I haven't explored in decades. I have echoes in my mind of my mother, back when I was a teen, saying "Well, you just can't make pie crust."
